Mango Cucumber Salad – Cool, Crunchy Bliss

Ingredients
For the Salad

2 ripe but firm mangoes, peeled and diced

2 medium cucumbers, sliced or diced

¼ cup thinly sliced red onion

2 tablespoons fresh cilantro or mint, chopped

1 tablespoon roasted peanuts or cashews (optional)
For the Dressing

1½ tablespoons fresh lime juice

1 tablespoon honey or maple syrup

1 tablespoon olive oil
-
¼ teaspoon salt

¼ teaspoon black pepper

Pinch of chili flakes or cayenne (optional)
Instructions

Prepare the produce
Add mango, cucumber, red onion, and herbs to a large bowl. -
Make the dressing
In a small bowl, whisk lime juice, honey, olive oil, salt, pepper, and chili flakes. -
Toss gently
Pour dressing over salad and toss lightly to avoid breaking the mango. -
Finish & serve
Sprinkle with peanuts or cashews if using.
Chill for 10 minutes for maximum freshness or serve immediately.
