Creamy Dill Chicken and Mushrooms

🧄 Ingredients

2 tbsp olive oil or butter

600 g (1.3 lb) boneless, skinless chicken breasts or thighs

Salt & black pepper, to taste

250 g (9 oz) mushrooms (button or cremini), sliced

1 small onion, finely chopped
-
3 cloves garlic, minced
-
1 tsp Dijon mustard
-
1 cup chicken broth
-
1 cup heavy cream (or half-and-half)

2–3 tbsp fresh dill, finely chopped

1 tbsp lemon juice
Optional:

½ tsp paprika
-
½ tsp dried thyme
🍳 Instructions
1. Cook the Chicken
Heat oil or butter in a large skillet over medium-high heat.
Season chicken with salt and pepper.
Sear chicken for 4–5 minutes per side until golden.
Remove from pan and set aside.
2. Sauté the Mushrooms
In the same pan, add mushrooms and cook until browned and moisture evaporates (5–6 minutes).
Add onion and sauté until soft.
Stir in garlic and cook for 30 seconds.
3. Make the Sauce
Add Dijon mustard, paprika, and thyme (if using).
Pour in chicken broth, scraping up browned bits.
Simmer for 3–4 minutes.
4. Make It Creamy
Lower heat and stir in cream.
Return chicken to the pan and simmer gently for 8–10 minutes until chicken is cooked through and sauce thickens.
5. Finish
Stir in fresh dill and lemon juice.
Taste and adjust seasoning.
