Ingredients
For the Salad

4 cups kale (lacinato or curly), stems removed, finely chopped

1 orange, peeled and segmented

1 grapefruit or mandarin, segmented

¼ cup thinly sliced red onion

¼ cup pomegranate seeds (optional but beautiful)

¼ cup toasted almonds or walnuts
-
¼ cup crumbled feta or goat cheese (optional)
For the Citrus Dressing

3 tablespoons fresh orange juice
-
1 tablespoon lemon juice
-
1 teaspoon honey or maple syrup
-
2 tablespoons olive oil
-
½ teaspoon Dijon mustard

Salt & black pepper, to taste
Instructions

Massage the kale
Place kale in a large bowl.
Add a pinch of salt and 1 teaspoon olive oil.
Massage with clean hands for 1–2 minutes until soft and deep green. -
Make the dressing
In a small bowl or jar, whisk together orange juice, lemon juice, honey, olive oil, Dijon, salt, and pepper. -
Assemble the salad
Add citrus segments, red onion, pomegranate seeds, and nuts to the kale. -
Dress & toss
Pour dressing over salad and toss gently to coat. -
Finish & serve
Sprinkle with feta or goat cheese if using.
Serve immediately or chill for 5 minutes for extra refreshment.
