    Citrus Kale Salad: 15-Minute Sunshine in a Bowl

    Ingredients

    For the Salad

    • 4 cups kale (lacinato or curly), stems removed, finely chopped

    • 1 orange, peeled and segmented

    • 1 grapefruit or mandarin, segmented

    • ¼ cup thinly sliced red onion

    • ¼ cup pomegranate seeds (optional but beautiful)

    • ¼ cup toasted almonds or walnuts

    • ¼ cup crumbled feta or goat cheese (optional)

    For the Citrus Dressing

    • 3 tablespoons fresh orange juice

    • 1 tablespoon lemon juice

    • 1 teaspoon honey or maple syrup

    • 2 tablespoons olive oil

    • ½ teaspoon Dijon mustard

    • Salt & black pepper, to taste


    Instructions

    1. Massage the kale
      Place kale in a large bowl.
      Add a pinch of salt and 1 teaspoon olive oil.
      Massage with clean hands for 1–2 minutes until soft and deep green.

    2. Make the dressing
      In a small bowl or jar, whisk together orange juice, lemon juice, honey, olive oil, Dijon, salt, and pepper.

    3. Assemble the salad
      Add citrus segments, red onion, pomegranate seeds, and nuts to the kale.

    4. Dress & toss
      Pour dressing over salad and toss gently to coat.

    5. Finish & serve
      Sprinkle with feta or goat cheese if using.
      Serve immediately or chill for 5 minutes for extra refreshment.
