    • 1 cup desiccated coconut

    • 125 g butter

    • 1 teaspoon vanilla extract

    • 1 egg

    How to Make It

    Step 1: Prepare the Pan

    Preheat your oven to 180°C (160°C fan-forced). Line a square baking tin with baking paper, leaving a little overhang for easy removal.

    Step 2: Mix the Dry Ingredients

    In a large bowl, combine the flour, desiccated coconut, brown sugar, and cocoa powder. Stir well to evenly distribute the cocoa and sugar.

    Step 3: Add the Wet Ingredients

    Melt the butter gently, then stir in the vanilla extract. Add the melted butter mixture and the egg to the dry ingredients. Mix until a thick, smooth batter forms.

    Step 4: Bake

    Press the mixture evenly into the prepared tin. Bake for 20–25 minutes, or until the slice is set but still soft in the centre. Remove from the oven and allow it to cool slightly.

    Step 5: Make the Icing

    Sift the icing sugar and cocoa powder into a bowl. Add the melted butter and hot water, stirring until smooth and glossy.

    Step 6: Ice and Finish

    Spread the icing over the warm slice so it sets beautifully. Sprinkle with desiccated coconut or chocolate sprinkles while the icing is still wet.

    Once completely cooled, cut into squares. Enjoy with a cup of tea, coffee, or a cold glass of milk.
