Ingredients
- 2 cups broccoli florets
- 1 can chickpeas, drained and rinsed
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop the broccoli into small florets.
- Drain and rinse the chickpeas.
- Dice the red onion.
- In a large bowl, combine broccoli, chickpeas, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Serve immediately or refrigerate for 30 minutes for better flavor.
