Ingredients

1 lb (450 g) ground beef

1 tablespoon olive oil (if needed)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt & black pepper, to taste

1 cup enchilada sauce (red or green)

1 cup canned black beans, drained and rinsed
-
1 cup corn kernels (fresh, frozen, or canned)

2 cups tortilla chips, lightly crushed (or corn tortilla strips)

1½ cups shredded Mexican-blend or cheddar cheese

Instructions

Brown the beef
Heat a large skillet over medium heat.
Add ground beef and cook until browned, breaking it apart.
Drain excess fat if needed. -
Add aromatics & spices
Stir in onion and cook 2–3 minutes until softened.
Add garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Cook 30 seconds until fragrant. -
Build the skillet
Stir in enchilada sauce, black beans, and corn.
Simmer for 5 minutes to meld flavors. -
Add tortillas & cheese
Gently fold in crushed tortilla chips.
Sprinkle cheese evenly over the top. -
Melt the cheese
Cover skillet and cook on low for 3–5 minutes until cheese melts and everything is hot. -
Serve
Remove from heat and top with your favorite toppings.
