Simple Chicken Alfredo Recipe

Ingredients

250 g (9 oz) fettuccine or pasta of choice

2 chicken breasts, thinly sliced

2 tablespoons olive oil or butter

Salt & black pepper, to taste

3 cloves garlic, minced
Alfredo Sauce

1 cup heavy cream
-
½ cup freshly grated Parmesan cheese
-
2 tablespoons butter
-
½ teaspoon Italian seasoning (optional)

Pinch of nutmeg (optional)
For Garnish (optional)

Fresh parsley

Extra Parmesan cheese
Instructions

Cook the pasta
Bring a large pot of salted water to a boil.
Cook pasta according to package directions until al dente.
Reserve ½ cup pasta water, then drain. -
Cook the chicken
Season chicken with salt and pepper.
Heat olive oil or butter in a large pan over medium heat.
Cook chicken for 5–6 minutes, turning once, until golden and cooked through.
Remove from pan and set aside. -
Make the sauce
In the same pan, melt butter.
Add garlic and sauté for 30 seconds until fragrant.
Pour in heavy cream and simmer gently for 3–4 minutes. -
Add cheese
Lower heat and stir in Parmesan cheese until smooth and creamy.
Add Italian seasoning and nutmeg if using. -
Combine everything
Add cooked pasta and chicken back to the pan.
Toss well, adding reserved pasta water a little at a time if needed. -
Serve
Taste and adjust seasoning.
Garnish with parsley and extra Parmesan.
